Sneaky Veggies Meatloaf
Ingredients
1) 1 Pound(s) lean ground beef
2) 1 Pound(s) lean ground turkey
3) 1 small onion, diced
4) 1 bell pepper, seeded and diced
5) large zucchini, grated
6) 1 Not Listed medium carrot, grated
7) 1 1/2 Cup(s) bread crumbs - (substitute Oats for gluten free version)
8) 1/2 Cup(s) grated parmesan cheese
9) 1 package of frozen spinach, defrosted and all excess water squeezed out
10) 2 Clove(s) garlic, minced
11) 1 Tablespoon(s) Worcestershire sauce
12) 1 Tablespoon(s) hot sauce
13) 2 Tablespoon(s) basil
14) 1 Tablespoon(s) parsley
15) 1 Teaspoon(s) kosher salt
16) 1 Teaspoon(s) ground pepper
17) 2 eggs
18) 1 Cup(s) tomato sauce
19) 1 small onion, cut into rings
Preparation Instructions
Preheat oven to 375 degrees F.

Combine all of the ingredients together except for the tomato sauce and onion rings in large bowl. (If ground meat and eggs are at room temperature, it's easier to mix.) Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the tomato sauce making sure to spread evenly over the top. Lay onion rings on top of sauce.

Bake for approximately 50 to 60 minutes or until a meat thermometer registers 160 degrees in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

If you can't wait an hour for this to bake in the oven…
You can also form the mixture into individual "hamburger" size patties (omit tomato sauce and onion rings) and cook on a grill pan.

Because you are hiding the veggies in with the meat. Normally my brother and father would never think to eat a zucchini…but if you shred it up and put it in a meatloaf they are never the wiser. :D
