I dislocated my shoulder a few weeks ago.

Fast forward to now.....

My doctor informs me that the examination of the MRI and X-rays, lead him to conclude that any surgical procedure would be unnecessary. I may now, according to my doctor, begin other activities provided I listen to my should pain and use common sense.

I intent to faithfully follow the PT recommentations I've been given. (I actually have 2 more weeks of PT....it's proven to be very humbling)

Prior to the injury, I was considering clubbells, specifically the 15s.
Should I reconsider clubbells? Perhaps a lighter clubbell?

Anything else I should consider?

Take this as 'my opinion' Paul... when your MD/PT approve resistance training, you should be able to do Clubbells. Continue to closely monitor the state of wellness in that shoulder, and bring it back up to speed gradually. How much 'work' you do with Clubbells is only partly-dependent on the weight of the tool, and there are conservative Clubbell exercises.

I'm a very small build, and 15s are not too heavy for me, but I'm not going to be able to do high rep-counts with 15s like I can with 10s, so there are different protocols that go with different sizes.

That's about as specific as I can be at this point... the CST Coaches can help you design your program, once you're able to train.
