As it is the month of Ramadan, Muslims are fasting from dusk to dawn. They do not take any food or drink during the day. They do it for spiritul reasons and to instill discipline but they also tout health benefits. I know that this type of fasting is cleansing. Do you know of any other health benefits?

What do Muslims eat after the sun goes down?
If it was me, the answer would be: "Everything in sight," and there would be limited "cleansing" as a result.

They eat dinner. The only additional thing they do is that they traditionally break the fast with dates (or some other fruit) and drink water. Shortly after that, they have their regular evening meal.
