For MMA athletes, there seems to always talk about long distance running vs sprinting.
My questions is..why run? are we running when we are fighting ??

For mma, no, though it CAN have its uses for weight management...
For any other form of MA that has self preservation, protection, defense, et cetera as it's objective, including those MA programs that use mma as a drilling method, then: what coach Sonnon said...

Did you get "Going Ballistic" ? Coach Jones talks a little about when and how running made sense for conditioning boxers. I don't want to give away the plot though.... get the book.

What is the specific goal of GPP in Circular Strength Training?
In CST, the goal of GPP is to approximate the physiological profile of the intended activity.
Any method can be used to do this. Running is one of the basal human cyclical motions.
Could one just spar all the time? No. Only someone who doesn't actually train up for an event and compete would theorize so. The body acclimates very, very rapidly. The longer and more efficiently one trains, the greater one reaches diminishing returns on any one activity. This is why all top athletes who are victorious due to their training methods (not in spite of them) hold variety in high premium.
Moreover, the longer one uses any one activity, when training at a highly competitive lever, the more likely that any one activity will lead to an overspecialization injury (or at least burn-out.)
Some coaches use a great variety of equipment. Some use a great variety of movements. Some use a great variety of protocols. But all use a great variety.
