i could eat all day! what a great section here. I have a tip for salad dressing substitute: lime juice and sunflower seeds. i also made a SPICY pesto if anyone would like to hear how i made it. I am sure i will get around to offering it anyway. Too much to choose from, there are SO many great recipes. I guarantee you all (y'all Coach Wilson) will be reading some tasty recipes from me quite soon. Ok, lately my snack food item has been coconut oil popped popcorn--no salt. incredible.

Matt,
Your salad dressing is exactly like the kind that I use. Just two questions: What do you use for "spicy"? and what exactly is Pesto?
Thanks,

ok, you use equal parts fresh organic basil, cloves of organic garlic, grated parmesean, extra virgin olive oil, raw organic pine nuts and lemon juice from fresh organic lemons (mine were from my grandma's orchard.) if you use a cup, make sure you smash as much basil as you can with your hands into the measuring cup. only reason i say this is because that is how i got my proportions. as far as the garlic, don't cut it, just put whole cloves in. then, you throw it all in a blender! there you go! i guess if you have a "magic bullet" (haha, you ever seen those infomercials?) you can use one. according to Steve Maxwell, they really work! all that garlic is REALLY going to spice things up. what you do with the pesto is up to you. ENJOY!
