This will be an on going thread about vegetable preparations.
Carrot Salad
1 cup Peeled Shredded carrot
1 Tbsp Zante currants
1 tsp finely chopped shallot
dash of red wine vinegar
dash of olive oil
sea salt/ fresh pepper
This is a good accompinament to any grilled meat, or on its own.
Celery Salad
1 cup thinly sliced celery
1/2 cup shredded Granny Smith apple(or any variety, I like the sourness)
1 tsp chopped shallot
1 Tbsp chopped walnuts
pinch of chopped parsley
dash of white wine vinegar
dash of (preferably walnut) oil
sea salt/fresh pepper
note- if you like, an addition of blue cheese to this raises it to another level.

Braised Escarole wth peppers
1 head of Escarole- 1 slice length wise and the 1/2 inch slices to core
1 red pepper(peeled if possible), cut into thin strips
1 green pepper(peeled if possible), cut into strips
1 clove of Garlic, chopped fine
2 Tbsp Olive oil
1/2 cup chicken stock(optional)
Sea salt/ fresh pepper, pinch of crushed red pepper
Over medium heat, in large pan saute peppers until soft.
Add garlic and chile flakes, stir
turn up heat and add escarole, stirring to coat in oil and peppers.
Add stock(if applicabe) or a splash of water, continue stiring until evenly wilted.
Season with Salt and Pepper
This good as a side to any meat or as a topping for Bruscetta.

Some really good recipes for side dishes, I'm digging them, keep them coming. If you don't mind, I'll post some of my side dishes here too.

Easy asparagus....
(so easy and tasty, I always make it this way)
A couple of Tbsp of butter for the sause pan
fresh asparagus
5 + cloves of garlic (sliced)
stir fry until a vibrant green.

Broccoli Rabe
1 bunch of Broccoli Rabe
2 Garlic Cloves thinly sliced, or chopped
2 Tbsp olive oil
Chili Flakes to taste(a big pinch)
optional: Bacon
Put a large pot of salted water on to boil(should taste like the ocean)
Chop Broccoli Rabe into 1/2 pieces
Add to boiling water , at first reboil, drain in colander and rinse with cold water.
In same pot, add olive oil (and bacon ,if using fry until cooked) over medium high heat, add garlic, and chili flakes.
Add Broccoli and toss for about a minte.
Season with sea salt and fresh pepper and serve.
This is great tossed with pasta, or as a side, or bruscetta.

A universal topping for veg side dishes, from Chef Jeff.
2 parts sliced or slivered almonds
1 part minced fresh ginger
butter
olive oil
white pepper
salt
Brown almonds and ginger together on low heat in just enough butter and olive oil to prevent sticking. Add salt and pepper to taste.
This is good sprinkled over any steamed or sauteed veg.
