    Easy honey mustard Lamb for 2

    1 Medium Onion
    2 tablespoons butter
    approx. 6 tablespoons honey mustard(I eye ball it so thats just a guess)
    1.25-1.50Lb Grass-fed leg-o- Lamb(New Zealand is the best)

    Pre-heat oven to 425 degrees

    Combine butter and honey mustard in a oven safe tea cup. Place into 350 degree toaster oven for approx 5 minutes or until completely liquified.

    Place Lamb(with no net) over onions with the fat of the Lamb facing up in a baking pan

    Pour butter/honey mustard mixture all over the lamb - there should be a light coating all over the lamb. If not, make more butter/honey mustard mixture.

    Place in oven. immediatly after placing it in the oven, reduce heat to 350 degrees.

    Cook to your liking - I usually let this bake for 50 minutes for medium-rare.

    I try not to fax meals anymore.. not after the incident .
